April will be all about COOKIES!!!


In April we will be exploring tastey morsels otherwise known as cookies and their potential with food storage! (After all who can turn down a cookie?!) Make sure to give me your opinion on the poll, contact me if you have any favorite cookies you would like to know how to make with food storage, or if you have any delicious recipes you would like to share. I’ll also share some good tips for making cookies in a hurry.

Easy & Delicious Beef Stroganoff

Beef Stroganoff
1 lb. stew meat, cubed
½ C. dried minced onion
1 can cream of mushroom soup
1 can mushrooms, drained
¼ tsp. garlic salt
1 C. sour cream (for richer taste, substitute1 pkg cream cheese)

Combine all ingredients except sour cream in greased slow cooker. Cover and cook on low heat 6-8 hours. Add sour cream the last hour of cooking. Makes 4-6 servings.

Spoon over hot noodles.

I got this recipe from “101 Things to do with a Slow Cooker” by Stephanie Ashcroft. I love it because it is very easy (especially if you store your meat already cubed) and the most delicious beef stroganoff I’ve ever eaten. Everyone I serve it to just RAVES about how delicious it is. Another perk is that all the ingredients minus the sour cream come from either long term food storage (dried minced onion=dehydrated onion) or my short term food storage (cream of mushroom soup, canned mushrooms, noodles, etc.) I think you could even use canned beef in the recipe if you’re out of time and don’t use the slow cooker, but I’ll have to try it and let you know :)

Don’t be afraid to use your slow cooker in the summer it is still a great way to start a meal in the morning and have it ready in the evening with out heating up your house!

Blender Wheat WAFFLES!!

Easy Gourmet Banana Nut Waffles shown above.

Blender Wheat Waffles (3-4 servings)

1 Cup Milk (3 T. Powdered Milk and 1 C. Water)
1 Cup + 1 Tbs Wheat Kernels, whole & uncooked

2 Eggs (2 T. Powdered Eggs and 1/4 C. Water)
2 tsp. Baking Powder
1/2 tsp. Salt
1/4 Cup Oil
2 Tbs. Sugar

Put milk and wheat kernels in blender.
Blend on highest speed for 4 or 5 minutes or until batter is smooth.
Add eggs, oil, baking powder, salt and honey or sugar to above batter.
Blend on low.
Pour batter into hot prepared waffle iron from the actual blender jar (only one thing to wash!)
Cook: They will take slightly longer to cook than regular waffles–keep checking.

Variation:

Easy Gourmet Banana Nut Waffles (I can not express how delicious this is!!!)
Great for a special occasion Mother’s Day, Father’s Day, or for a brunch.
Increase wheat to 1 Cup + 2 Tbs (that is an extra 1 Tbs of wheat added to above recipe)
Blend two ripe bananas into batter before pouring into the waffle iron.
Sprinkle chopped walnuts (if desired) over top of batter before closing the waffle iron.
Prepare and Cook as directed above
Serve with Hot Homemade Caramel Sauce below

(This is the easiest and most delicious Caramel Sauce I’ve ever eaten!)
Hot Homemade Caramel Sauce
makes enough sauce for 2 recipes of waffles–good on many deserts too!

1/2 Cup buttermilk or 1/2 Cup milk with 1/2 tsp. vinegar or lemon juice
2 Cups Sugar
1/2 Cup Butter
2 Tbs. Corn Syrup (not essential but it will help your syrup keep longer with out going grainey)
2 t. baking soda
1 tsp. Vanilla (do not add until after removing from heat)

Mix ingredients in a pot and boil for 3 minutes, the sauce will turn to the carmel color towards the end of boiling. (Essential Tip: mix in a pot one size larger than you think you will need. The syrup will be frothy in the beginning and it is awful cleaning up a burnt sugarey mess on your stove…trust me!)

Stir in vanilla when syrup is finished cooking.

Canned Beef Tacos


I just made the most TASTEY beef tacos on Friday. The meat was tender, savory, and very delicious. My husband thought I’d been cooking it all day. But I have a little secret he doesn’t know…


I realize that in posting this, I will most likely blow my cover entirely but it is worth sharing for all of your convenience and taste buds! One of my favorite things about food storage is its help with the EVERYDAY emergencies (thank goodness because everyday emergencies happen far more often than earthly calamities). Friday is usually my cleaning day and I can get most of it done while my baby is taking her morning nap but on Friday she decided she only wanted short naps and for me to hold her so we had a great time cleaning the house together ALL day. The clock struck 5:30 and I knew my husband would be home soon and I had no dinner! (Sound familiar to anyone else?) I grabbed two cans of chunked roast beef from Costco and a can of green chilis and was on my way. Canned meat is the best for “quickie” meals.

All you have to do is saute your canned beef with juices (which will turn your chunks into shredded meat and make it taste like you’ve been slow cooking it all day) with some onions (I of course use the dehydrated onions) a can of green chilis of you want and some spices. You can use beef taco seasoning or I used some garlic salt and cumin. I served it with taco sized tortillas, shredded lettuce, tomatoes, sour cream, green onions, salsa, and guacamole that I keep in the freezer. I served it with grapes, tortilla chips and salsa. You can also serve it with your dehydrated refried beans of course! Bon Apetite!
