Gluten-Free Peanut Butter Cookie-Food Storage Recipes

My mom made these growing up and I forgot how DELICIOUS they are! They taste like the inside of a Reese’s Peanut Butter cup but in cookie form. No joke! My husband doesn’t even like peanut butter cookies but ate a handful of these cookies. The other plus of these cookies is that they are great for kids to make. They don’t take more than 4 ingredients and there is hardly any clean up when you are done.  Plus, not only do they use food storage but they are also gluten-free!
Gluten-Free Peanut Butter Cookies-Food Storage Recipes

This is the perfect combination of food storage and gluten-free! Give it a try they are totally delicious!
Ingredients
  • 1 C. Peanut Butter
  • 1 C. Sugar
  • 1 Egg (1 T. Dry Powdered Eggs + 2 T. Water)*
  • 1 tsp. Vanilla
Instructions
  1. Mix ingredients in bowl and form into 1″ balls on ungreased baking sheet.
  2. Criss cross with fork and bake at 325 for 10-12 minutes.
Notes

*I did make these with powdered eggs and it did work but the cookie was a little more fragile than when you use a real egg. (Since it is really the egg that is holding everything together.)

    I have a friend in AZ who does food storage also, but found that she is alergic to gluten, I am going to pass this on to her. I never knew you could make cookies without flour.

    Thanks for the gluten free options! I have been gluten free for close to a year & 1/2 & it’s so nice to find yummy treats I can eat. I only wish going out to eat was as easy.

    Yum! My only complaint is that I only got about 2 dozen cookies out of this… but that’s probably a good thing considering how fast they went once baked! Even if I tripled the recipe, I don’t think these would ever make it to the cookie jar. :)

    I also loved that I had almost no cleanup involved. I mixed the whole thing in one two-cup measuring cup and only had a few utensils to clean in addition to the measuring cup.

    My husband is gluten free is there any recipes you can supply to use with the food storage recipes. We struggle making these because all the others contain wheat products. Please help!
