My husband has an extreme distaste for foods he deems "Ethnic" which includes anything with beans in it; but his favorite nacho's are what we call fish nachos. They are topped with imitation crab, colby jack or white cheese and paprika. The only cheese we don't like with it is cheddar, as the flavor overpowers the fish. He is a VERY picky eater and loves the meal, and I can add all the yucky stuff to mine and the baby's.
