		<description>This is great...my 4-yr old was checking the oven every 5 minutes asking when it was going to be ready and devoured an entire piece straight out of the oven...I did substitute a couple things 

Egg substitute (1/2 c) for the eggs
Brown sugar splenda blend (1/4 c packed plus 1T) for the brown sugar
and, Smart balance butter blend (same amount as butter or margarine)</description>

Anyway, my family loved, loved, loved this banana bread.  I followed your recipe exactly and it was gone in one sitting...of course, there are 7 of us, so eating one loaf takes about 1 1/2 minutes!  Have you ever frozen batter?  I wondered about making several batches and then freezing a &quot;loaf&quot; of batter so I can pull it out when I need it.  Or, perhaps I should freeze the bread when it&#039;s done...</description>
