Fanatic Friday Food Storage Recipe: Chicken and Rice

Thank you for all of your patience!  My baby is doing a little better and went to bed early tonight so I thought I would sneak in a post.  I realize it’s a little early for a Fanatic Friday post but this dish looks too good to WAIT!  This recipe comes from Staci and it looks AMAZING!  Give it a try!

Chicken & Rice
4 Chicken Breasts (or 3 cans Chicken)
2 cans of cream of mushroom or chicken soup (you could of course make your own click on the names of the soup to learn more!)
1 can cut green beans
1 C shredded cheese
1 C water
3 C Un-Cooked Rice (I used brown)
Season salt and olive oil
 
Brown chicken in olive oil. While that is cooking, combine rice, soup, green beans, and water in either corningware dish or 13×9 pan. Sprinkle 3/4 cheese on top. Either cut up chicken or leave as whole breasts and add to top. Sprinkle with remaining cheese. Bake, covered 350 for 30-40 min

SHELF RELIANCE AT LEHI COSTCO!

If you live in vicinity of the Lehi Costco and have wanted to get some shelf reliance shelves head over today! I was there last night and their prices are better than any sale you can get on the website or at their store. For example, the Harvest shelf which is usually $659 is on sale for $469!! That is a savings of almost $200!!! I asked the guy there all about it and he said today (Saturday Feb 21) is the last day at Lehi. Soon they will be visiting St. George and Henderson NV! GOOD LUCK!

Fanatic Friday Food Storage Recipe Rewind: Sweet & Sour Meatballs: Rice Food Storage Recipes


This is one of my favorite meals from growin up. As a kid it was delicious because it’s sweet and has the pineapple in it and….well…it’s still completely delicious as an adult. It’s really easy to make and if you don’t have frozen meatballs you can make some, bake them, and then freeze them and always have them on hand. Plus, it sits on rice. I think rice is on of the easiest food storage items.

Sweet & Sour Meatballs
20 Meatballs 

Combine and Cook in a skillet until the sauce is Clear and thick:
1 can 20 oz. Pineapple Chunks & Juice
1/3 C. Vinegar
6 T. Sugar
1 T. Soy Sauce
3-4 T. Corn Starch mixed into 1/3 C. Water (I just mix the cornstarch into my liquid measurer)

2 Green peppers cut into strips, add to above and simmer 5 min.

3 Tomatoes cut in wedges, stir into above and serve immediately over rice.

Meatballs
2 lbs. raw Ground Beaf
1/2 C. Oatmeal
1 beaten egg (2 T. Dry Egg Powder + 1/4 c. water)
2 tsp. Salt
1/2 tsp. Garlic Powder
Combine ingredients and form into walnut size balls and bak in jelly roll pan at 425 for about 10-15 minutes or brown in 3 T. Butter on large skillet.
