If ye are prepared….ye shall not fear!

I know a lot of people are getting worried with a lot of news time being dedicated to the Swine Flu. It can seem scary and full of panic to watch what they are saying on the news but there is no need to panic! These type of scenarios are a good time to evaluate where we are with our preparedness both food storage and emergency. I would suggest to use this as a good warning to get our houses in order since we won’t always have the news to warn us when something is coming. But remember, it doesn’t have to be done all at once! PLEASE Don’t Panic! The church has a GREAT information about how to prepare for a pandemic, please read it over and prepare for anything that may happen soon or not so soon because after all, if ye are prepared, ye shall not fear! It is a wonderful blessing from the Lord and I the same blessing for you and your family! I know I’ll be spending the next couple of days re-evaluating what I have on stock and how prepared I am.

Graham Crackers-Whole Wheat Food Storage Recipes

Who knew you could make such amazing graham crackers right at home? Karen from ID sent me a GREAT recipe (it tastes like a mix between graham crackers and Teddy Grahams). It’s easy to make and uses food storage so you know I’d love it! I went ahead and made a how-to video on how to make them so…enjoy!

Graham Crackers-from Karen in Chubbuck, ID
1/3 cup shortening
3/4 cup plus 1 T. sugar (I use brown sugar)
3 T. honey, warmed
1 1/2 tsp. vanilla
1 3/4 cups whole wheat flour
1 1/4 cups all-purpose flour
1 1/4 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup plus 2 T. water
I add in 1-2 t. cinnamon

Preheat oven to 300 degrees. Combine shortening, sugar, honey and vanilla.
Blend until smooth. Combine dry ingredients in a separate bowl, and then
add dry mixture to the wet ingredients and blend well with electric mixer.
Slowly add water to the mixture while beating. You may have to mix by hand
until the mixture forms a large ball of dough.

Divide the dough in thirds and roll one third out on waxed paper till at
least 1/16″ thick. It should be very thin. Use a knife to trim into a
rectangle slightly smaller than the sheet pan you will be using. Grease
the baking pan with a light coating of shortening. Turn the dough over
onto the baking sheet and remove the wax paper.

Use a knife to score the dough into smaller crackers. Use a toothpick (or
fork) to poke holes over the entire surface of the dough. Bake for 22 to
24 minutes, or until the dough begins to turn light brown around the
edges. Turn the baking sheet around halfway through baking time for even
browning. Cool the crackers before breaking them apart along the scored
lines. Repeat process for remaining dough. If desired, you can sprinkle a
cinnamon/sugar mixture over the dough before baking to make cinnamon
grahams.

NEW! Bread Handout!

I hope you all had as much fun as I did learning more about “The Wonderful World of Bread” Next we’ll be talking about homemade noodles and crackers. (YUM!) And remember, we’ll re-visit bread when we talk more about sourdough and it’s role in everyday baking along with emergency baking (i.e. if you don’t have yeast or can’t get to a store to buy yeast)

Now on to the fun stuff, Yes, that is correct! You’ve asked for it and you’re getting it…a FREE bread handout. It includes the Bread FAQ’s, how to make your own dough enhancers, and some of my favorite bread recipes along with links to the how-to videos on how to make them! (Yes, every recipe included on this handout also has a how-to video on my blog that you can watch.) Download the handout and feel free to pass it along to friends, family, or people you don’t want knocking on your door in an emergency. ;) Let’s get everyone using their food storage!

p.s. I’ve had a lot of requests to get more conversion chart magnets available….which I have also done. Click HERE for more information on them and how you can order yours. Last time they went really fast, so if you’re interested I wouldn’t procrastinate. ;)
