Too much Zucchini?-More Food Storage Recipes

I realized today that most people probably aren’t still waiting for their zucchini plants to really get going like I am, so I’ll stop procrastinating this post! Zucchini is really great the first couple times you eat it but can get old when your plant is giving you 3-4 a DAY! Here are three great recipes that you can use with your zucchini but you can also shred the zucchini and freeze it for up to 6 months and use it in recipes during the winter or you can de-hydrate it (assuming you have a dehydrator). Dehydrating is a great way to store those summer vegetables you have too much of. (Sun dried tomatoes are DELICIOUS!…a post on that to come later…assuming my tomato plants start going ;)

Okay, so now that I’m drooling over these recipes and jealous of anyone who has an overactive zucchini plant at this point…I’m going to go outside ASAP and hope I have lots of delicious zucchinis waiting to be eaten by ME!  Wish me luck! :)

Canning Long-Term Food Storage Items

To a lot of people this step of food storage is the scariest but, like most food storage principles, it is actually quite easy!  I get asked questions all the time about what and LDS cannery is like and/or what it’s like to can things at home and since the LDS Canneries just dropped their prices on their food, I figured now would be the PERFECT time to show you how it’s done!  You don’t need to be LDS to take advantage of an LDS cannery…we want EVERYONE prepared! :) Watch the video below to see how to work the “canner” or sealer. 

 

 

 

Now like I said before prices have just DROPPED at the LDS canneries.  I was so happily surprised when I went to purchase powdered milk and I found out that the price has been reduced by 30-percent! (That means that a can of powdered milk just dropped $2 a can…that is a HUGE savings!) That means that if you were to make a gallon of milk from powdered milk it would cost only $1.06, sweetened condensed milk would cost about 60-cents and evaporated milk costs about 20-cents made from powdered milk.  Now that will save your family A LOT of money!  

I also found out that the canneries have items already canned that you can purchase with out canning!  Those items are rice, oats, RED wheat, pinto beans, and a starter kit including the previously mentioned items.  They used to cost more to purchase because they were pre-canned but now they are the same price!  You can also purchase those items online, by clicking HERE.  So it’s a great day to hit the cannery!  (And you can’t say it’s scary anymore or that you don’t know what to do! :)

Pioneer Day FHE and Food Storage Recipe!-Apple Slices Food Storage Recipes

You know how I LOVE themed Family Home Evening lessons and an FHE for Pioneer day (July 24th, the day the Mormon Pioneers entered the Salt Lake Valley) is no different!  I think it’s so important to teach our heritage to our children so they know the strength of past and present pioneers.

This dessert is SO delicious and SO easy when you use your apple slices.  Apple slices make any baked apple dessert a BREEZE to make.  Just think…no peeling, slicing, worrying about your apple slices turning brown!  You simply hydrate the apples in hot water for 5 minutes and follow your recipe. A total life saver when you are short on time…although…aren’t we all? :) Another great reason to turn your baked apple recipes into food storage recipes every time!

Apple Brown Betty

Filling:

2 C. boiling water
4 C. dried apple slices

Topping:
1/2 C. whole wheat flour
1/4 C. oatmeal
1/4 t. cinnamon
1/4 C. brown sugar
1/4 C. butter

Pour boiling water over dried apples.  Let stand at least 5 minutes.  Meanwhile, mix dry topping ingredients together, then cut in butter.  Place apples and any remaining liquid in a greased 9-inch square baking pan.  Sprinkle topping over apples.  Bake at 350 for 55 minutes.
