		<description>I&#039;m kickin&#039; myself for not throwing some zucchini seeds in the ground this summer.  But I have been buying them at the farmer&#039;s market.  Here&#039;s another GREAT zucchini recipe.  Swap zucchini for apples and make a crisp.  You CANNOT tell it&#039;s not apples.  Really good!

		<description>Thanks for the recipes, I have some volunteer zucchini plants producing now; my &#039;real&#039; garden was planted only about a month ago.  My favorite way to preserve zucchini now is to puree and freeze it.  The puree works great in breads, cakes, muffins, waffles; whatever I&#039;ve tried.  The problem with shredding and freezing is that when thawed it becomes green fiber with lots of zucchini water.  See what you think!</description>
