I just made the bread and got my "mini cinnamon chips" just like a mini chocolate chip at Bakers cash and carry in SLC, UT. You can also order them from their website. NOTE: Do NOT knead the bread with the chips in it, they all melt and you have a cinnamon flavored bread. Maybe I should have known that but I have never NOT kneaded a yeast bread before. Just mix at the "cake like" stage for about 4 minutes in bosch or kitchenaid and you will be fine. YUM!

I tried making the cinnamon chips. I also tripled the recipe and started out at 250F. My chips never melted or got bubbly. After a time of raising the temperature to see if they would melt I finally took them out of the oven. After a couple of minutes they hardened and I broke them up. I decided to go ahead and use them in the bread recipe. The bread was delicious but I should have used more chips.
Robyn

I found a recipe to make your own cinnamon chips or chunks It was easy to make and turned out great in the bread. My family loves it.
Heat oven to 200F.
( I did 250, because 200 didn’t melt it, maybe because I tripled the recipe)
Combine:
1/3 c granulated sugar
1 1/2 TB cinnamon
1 TB solid all-vegetable shortening
1 TB light corn syrup
Mix with fork until uniform and crumbly.
Spread on foil-lined baking sheet and bake until melted and bubbly, about 35 minutes.
Cool completely, then break into small pieces. ( about 1/2 inch by 1/2 inch, that way you get better pockets of cinnamon)
Makes 1 cup (approx)

I found cinnamon chips at Kitchen Kneads just yesterday. They sell them in bulk. They are located on Redwood Road and 7600 South. Right across the street from West Jordan Middle School. They are great chips. I can't wait to use them in this recipe.
