We’re talking about some great neighborhood gifts that you can give that have food storage in it and we’re getting into the really good stuff now! We’re going green this Christmas and using packaging from other items (i.e. tin cans, peanut butter bottles, frosting containers, etc.) to wrap our presents instead of filling the landfills! This is also great for you because it will save you money…after all you’re paying for this packaging, you may as well get some more use out of it! Now before we begin I need to show you a couple of things so that you can be successful at using whatever you have around the house to cover the lids. (Trust me you are going to love this and it’s much easier and CUTER than you think. *Note: in the video I say to measure the circumfrence of the jar or can and I meant the diameter…

Neighborhood Gift Idea #3: Blender Wheat Pancake Mix…in a Tin Can

Now, that we have that out of the way we can talk about putting a mix for blender wheat pancakes in our tin cans. Now, I used a 14.25 oz. tin can (from our Cranberry sauce from Thanksgiving). You can use cans you may have around the house that are slightly smaller or larger than that…just make sure you wash them first. Watch the video to see how it’s done. (The label I show on the can isn’t the one I have for you to download…I made it much cuter for you!)

For Reference, here are the items you need for your mix:
1 C. Whole Wheat Berries

In Dry Mix baggy:
3 T. dry powdered milk (non-instant…if you use instant it would be 1/3 C.)
2 T. powdered eggs
2 tsp Baking Powder
1-1/2 tsp Salt
2 Tbs. Sugar

The Very Cute Label (don’t you agree?

For great seasonal waffles that let you grind wheat in the blender look no further than a variation on an old favorite! Blender Wheat Waffles! These are just as delicious and just as easy as the original recipe. Plus, we’re using a lot of food storage and LOVING IT!! You don’t need the caramel syrup to make it taste delicious. Feel free to use whichever kind of syrup your family enjoys.

Pumpkin Blender Wheat Waffles with Caramel Sauce

1 Cup Milk (3 T. Powdered Milk and 1 C. Water)
1 Cup + 2 Tbs Wheat Kernels, whole & uncooked
2 Eggs (2 T. Powdered Eggs and 1/4 C. Water)
2 tsp. Baking Powder
1/2 tsp. Salt
1/4 Cup Oil

1/2 Cup Pureed, Cooked Pumpkin

1-1/2 t. Pumpkin Pie Spice
2 Tbs. Sugar

Put milk and wheat kernels in blender. Blend on highest speed for 4 or 5 minutes or until batter is smooth. Add eggs, oil, baking powder, salt, pumpkin, pumpkin pie spice and honey or sugar to above batter. Blend on low. Pour batter into hot prepared waffle iron from the actual blender jar (only one thing to wash!)

For a yummy variation, put chopped pecans on the top of the batter in the waffle iron before closing.

Caramel Syrup

3/4 C. Butter

1-1/2 C. Sugar

2 T. Light Corn Syrup

3/4 C. Buttermilk

1 t. Baking Soda

2 t. Vanilla

Combine ingredients in sauce pan (it gets frothy so make sure and use a large enough pan so it doesn’t spill over). Stirring constantly, heat sauce until boiling and then boil for 5 minutes.

Did you know that you can easily crack small amounts of wheat in your blender? Why you may ask, would someone want to crack their wheat? Well cracked wheat can be a great way to rotate your food storage. You can eat it for cereal and use it as a meat extender or a nut substitute. For a great food storage recipe that uses the cracked wheat, click here.

If your family is particular and has favorite cookie recipes don’t be afraid to pick a couple out that would hide the wheat well. Here are some tips to help you know which recipe would be right to sneak your food storage wheat into:

1. Any cookie recipe with oats will mask the wheat because the oats already give a “hearty” feel to the cookies

2. Brown sugar in the recipe will mask any extra brown coloring from the wheat and help keep the cookie moist. So a recipe that calls for all brown sugar would be ideal or at least equal parts brown sugar and white sugar.

3. Chocolate is a strong flavor that will mask even the pickiest eaters taste buds.

4. You don’t have to start out replacing all the all-purpose flour with wheat flour. Start out doing 1/2 and 1/2 and work your way up to all wheat flour.

5. Use white wheat. White wheat doesn’t have the strong taste that red wheat has and is much easier hidden in things like cookies.

6. Don’t warn your family before they try it. They will assume that the cookie is how you always make it.

I served these at a dinner party and everyone gobbled them up! Don’t tell anyone there is wheat in them before they eat them, it is so much fun to see their face when you tell them the cookie they love has wheat!

For presentation, I also dusted the tops of the frosted cookies with cocoa powder. These cookies are good with out the frosting if you don’t feel like frosting cookies! The dough can be kind of sticky and chilling the dough before baking will help.

Easy Gourmet Banana Nut Waffles (I can not express how delicious this is!!!)
Great for a special occasion Mother’s Day, Father’s Day, or for a brunch.
Increase wheat to 1 Cup + 2 Tbs (that is an extra 1 Tbs of wheat added to above recipe)
Blend two ripe bananas into batter before pouring into the waffle iron.
Sprinkle chopped walnuts (if desired) over top of batter before closing the waffle iron.
Prepare and Cook as directed above
Serve with Hot Homemade Caramel Sauce below

(This is the easiest and most delicious Caramel Sauce I’ve ever eaten!)
Hot Homemade Caramel Sauce
makes enough sauce for 2 recipes of waffles–good on many deserts too!

1/2 Cup buttermilk or 1/2 Cup milk with 1/2 tsp. vinegar or lemon juice
2 Cups Sugar
1/2 Cup Butter
2 Tbs. Corn Syrup (not essential but it will help your syrup keep longer with out going grainey)
2 t. baking soda
1 tsp. Vanilla (do not add until after removing from heat)

Mix ingredients in a pot and boil for 3 minutes, the sauce will turn to the carmel color towards the end of boiling. (Essential Tip: mix in a pot one size larger than you think you will need. The syrup will be frothy in the beginning and it is awful cleaning up a burnt sugarey mess on your stove…trust me!)

Stir in vanilla when syrup is finished cooking.
