Don’t get me wrong. I literally LOVE broccoli and cauliflower (and I realize that by admitting that some of you may be questioning my taste in food). However, my husband, like a lot of people, doesn’t like broccoli or cauliflower either (and was also disappointed when I craved raw broccoli with our first baby instead of ice cream or cookies) and so every once in awhile I will make him that classic cheese sauce to put on his vegetables. I love it because it is SO easy to do with Magic Mix since since it’s basically a white sauce with cheese!

Vegetable Cheese Sauce
(makes about 1 cup)

1 C. water
1/2 C. magic mix (this is less than you would use for a thick sauce, because I like mine thinner-if you like yours thicker than use the full 2/3 C. magic mix like it calls for in the original “Magic Mix White Sauce” recipe)
1/4 C. cheddar cheese, shredded

Combine water and magic mix in a pot over medium high heat. Stir constantly with whisk until it bubbles and thickens. (If you’re worried at this point that the sauce is too runny, don’t make a final judgement until the cheese is added as that will also thicken the sauce.) Stir in shredded cheese until melted in sauce. Serve warm over vegetables. Store leftovers in the fridge for up to a week. Perfect for kids or husbands!

I found this recipe from one of my favorite people in my ward cookbook. Don’t you just love ward cookbooks?! They are so condensed with wonderful tried and true recipes. I, personally, love Chicken Cordon Bleu (calories aside…so sorry if this is tempting your New Year’s diet but I just couldn’t resist) but it can be really time consuming and intimidating to make! So you can guess how happy I was to make this in no time at all and have it taste just the same! Plus, you can make exactly 1 1/2 cans of Condensed chicken soup from magic mix, with out any waste while using your food storage, so easy! I even made this for some friends and they couldn’t stop raving about how wonderful it tasted.

Easy Chicken Cordon Bleu

8 boneless chicken breasts
8 thin slices of ham
8 thin slices Swiss cheese
1 1/2 cans cream of chicken soup (1 1/2 C. Magic Mix, 1 1/8 C. Chicken Broth (either from a can, bouillion, or liquid from canned chicken), 1 1/2 t. Dry Parsley, Dash of Onion Salt-Bring together over high heat, stirring constantly until thick)
1/2 c. water
1 box Stove Top for Chicken Stuffing

Layer chicken, cheese, and ham in a baking dish. Mix soup with water and pour over chicken. Melt 1 cube of butter in saucepan. Add stove top stuffing with seasoning. Sprinkle over top. Bake covered at 350 for 45 minutes. Uncover and bake 15 minutes longer.

Okay, so you may or may not know this about my family but we LOVE pizza. I don’t know if I should admit this or not but we eat it probably once a week….which before I made our own pizza was expensive (very, very expensive…even with coupons). When I first started making pizzas I stuck with the originals (Hawaiian, Mushroom & Olive, etc.) but as I’ve branched out, I’ve discovered some really fun things you can do with pizza….and food storage! Now, obviously if you’re making your own pizza crust you’re using your food storage, and why not try it with whole wheat?! I noticed over the summer that Papa John’s is now marketing a whole wheat pizza (which of course costs more). So if Papa John’s sells it…there is no reason why you can’t make it! Personally for a pizza crust, I either do the 30 Minute Pizza Crust, or the EZ Bread Dough Recipe. But enough about the crust..that is the boring part…let’s talk toppings (other than pepperoni). Papa Murphy’s has this pizza that I LOVE. It has this white garlic sauce, mozerella cheese, fresh vegetables and chicken. I had always wondered what that oh so delicious secret sauce was…until it dawned on me…it’s a WHITE SAUCE with GARLIC. Well…good grief…I know how to make a white sauce (and pretty easily I might add), thanks to magic mix. So yes, I was very pleased with myself when I could make that Papa Murphy’s pizza, just how I liked it, at a fraction of the cost…and so can you! Here’s how…

Garden Vegetable Garlic Pizza

1 Pizza Crust
1 Grilled Chicken Breast (optional)
Fresh Vegetables (which ever your family likes, if you choose to do broccoli like I do, you’ll need to slightly cook the broccoli before adding it to your pizza or it will be too crunchy)
Mozarella Cheese
1 C. Garlic White Sauce (2/3 C. magic mix, 1 C. water, and 2 T. fresh, minced garlic-garlic should be done to taste, mix over medium high heat until it thickens)
Asiago Cheese (optional) I just like to put a little on top

Place garlic white sauce on top of crust, then cheese, then toppings and bake.

Thank you for all of your patience! My baby is doing a little better and went to bed early tonight so I thought I would sneak in a post. I realize it’s a little early for a Fanatic Friday post but this dish looks too good to WAIT! This recipe comes from Staci and it looks AMAZING! Give it a try!

Chicken & Rice

4 Chicken Breasts (or 3 cans Chicken)

2 cans of cream of mushroom or chicken soup (you could of course make your own click on the names of the soup to learn more!)

1 can cut green beans

1 C shredded cheese

1 C water

3 C Un-Cooked Rice (I used brown)

Season salt and olive oil

Brown chicken in olive oil. While that is cooking, combine rice, soup, green beans, and water in either corningware dish or 13×9 pan. Sprinkle 3/4 cheese on top. Either cut up chicken or leave as whole breasts and add to top. Sprinkle with remaining cheese. Bake, covered 350 for 30-40 min

I’ve been making this recipe since college and was excited that it used rice for the food storage…until I figured out how to make it using MAGIC MIX! Now it’s even easier to make (which in and of itself is shocking) and SUPER delicious!

Lemon Pepper Chicken Saute

4 chicken breasts
2 T. butter
1 c. baby carrots, quartered length wise
1/3 c. sliced green onions
1 c. chicken broth (I made mine from bouillon…so much cheaper)
1/2 c. MAGIC MIX
2 t. lemon pepper
1/4 c. sour cream or cream cheese
1 t. parsley flakes

In large skillet, melt butter over medium heat. Saute chicken 7-10 minutes per side or until done; remove from skillet. Keep warm.

Add carrots and onions to skillet. Saute 2 minutes. Pour in chicken broth, lemon pepper, MAGIC MIX (remember you can add MAGIC MIX directly to a hot liquid with OUT it clumping!) Stir with wire whisk until thickened. Simmer 2 minutes. Add sour cream/cream cheese and parsley. Simmer 2 minutes. Spoon over chicken and serve over rice.

If you have questions about rice, make sure you read my previous post about rice by clicking HERE.

This is the pot roast my mom made growing up. To me there is NOTHING BETTER than walking into my house and smelling the smells of my childhood, not to mention this food storage recipe is EASY and has LITTLE mess! It didn’t always include as much food storage but you know me…I think almost any recipe can become a food storage recipe! Try it for yourself…

Slow Cooker Pot Roast

1 Pot Roast, thawed (remember you can’t put frozen meat in a slow cooker)
1 Potato for EACH person, cut into quarters
1-2 Onions, cut into eighths
1/4 C. Carrots for EACH person, cut into chunks (or use baby carrots)
1 packet Dry Onion Soup Mix
1-2 cans Cream of Mushroom Soup (which I of course made with my magic mix…so delicious! Click HERE for the recipe)
1 bag frozen peas

Directions:
Place meat in bottom center of slow cooker. Place cut potatoes, onions, and carrots around meat and along edges. Combine soup and dry onion soup mix and pour over meat and vegetables. (Make sure that your potatoes are covered or they’ll be purple!) Cook on low heat 6-8 hours. During last hour of cooking pour frozen peas on top (if you do it before the last hour they tend to get mushy). After it is finished cooking and depending on how thick you like your gravy you can empty the meat and vegetables and thicken the gravy with more magic mix (pretty great, huh?), corn starch, or flour in a pan/pot over the stove.

I received so many great pies from viewers that this week we are having TWO Fanantic Fridays to help you next week with your Thanksgiving plans. This pie looks delicious and I think would work well with vanilla or with chocolate pudding. Brooke sent me this delicious looking Banana Cream Pie that uses Magic Mix pudding and is loaded with vanilla wafers (Who doesn’t love a good vanilla wafer?!). (To watch a how to video of how to make your magic mix visit my “How-to Video” page)

Banana Cream Pie
Crust
1 ½ cups crushed Nilla Wafers
3 TBS melted butter

Press into 9 inch pie pan;cook at 350 for 5 min

Pudding
1/2 C. Sugar
1 C. Magic Mix
2 C. Water
1 t. Vanilla

Combine Magic Mix, sugar and in saucepan and mix well. Add water, stir over medium heat until pudding bubbles. Add vanilla and beat.

Assembly
Slice 4 bananas into pie crust
Pour pudding over the bananas
Top with Nilla Wafers
Chill and serve.

**Variation**-(From Crystal) I think this pie would be delicious as a Chocolate Banana Cream Pie. You can still use the vanilla wafers just add in 2-3 T. Cocoa to the magic mix pudding mix above when you mix the magic mix with the sugar. Follow the rest of the steps as stated.

THANKS BROOKE!!

Today, I’m featuring a recipe that was a request from Rachelle who wanted a cheesy potato & broccoli soup…and of course it uses Magic Mix! (For a video of how to make magic mix, click on the How-to Video Page) My family gobbled it all up (and who wouldn’t with a soup that tastes like a baked potato?!) I make this soup when I have left over baked potatoes in the fridge (and I usually do since I make sure to throw in a couple extra with my roast or meatloaf Give it a try…it’s easy and fast to make…it’s sure to please!

Cheesy Baked Potato and Broccoli Soup
1 C. Magic Mix
1 1/2 C. Water
3/4 C. Sour Cream
2-3 Baked Potatoes (you can also just use microwaved potatoes)
1 1/2 C. Shredded Cheddar Cheese
1 1/2 -2 C. Chopped Broccoli
Salt & Pepper to Taste
Garnish with Bacon bits and green onions or chives, if desired

Mix magic mix and water over medium heat, stirring constantly until it begins to boil and thicken. Add in remaining ingredients. Garnish with bacon bits and or green onions.

**Shopping tip** To save money on bacon in any recipe calling for bacon bits…don’t purchase the full strips of bacon. Grocery stores usually sell bits and pieces of bacon left over from the strips at a discounted price…plus they are all ready smaller pieces. Now, that is saving you time and money!

Up Next: Delicious Pies for Thanksgiving. I’ll be revamping that classic pumpkin pie recipe to show you how to make it from food storage, some delicious apple pies that will save you time by using your dehydrated apples…and one that is HUGE surprise!

Hopefully with these three soups (cream of chicken, mushroom, and celery) you can make any of your family’s favorite casseroles!

Condensed Cream of Celery Soup

1 C. Magic Mix
¾ C. Water from Cooking Celery
1 C. Chopped Celery, cooked and drained (I use dehydrated celery and use the water left over from hydrating the celery as my water)
Pinch of Celery Seed
1 t. Dry Parsley Flakes (optional)

Combine magic mix and water from cooking celery. Stir constantly over medium-high heat until it thickens. Add in celery, celery salt and parsley. Use in any recipe calling for canned Cream of Celery soup.

Now for a recipe to use the Cream of Celery…I know a lot of people use cream of mushroom in their tuna fish casserole, but personally I like the flavor of cream of celery a lot more. Give it a try!

Tuna Fish Casserole

3 Cans of Tuna, drained

2 Cans of Cream of Celery Soup

2 C. Grated Cheddar Cheese

12-16 oz. wide noodles, cooked

1 Bag of Peas

Mix together and put in microwave until mixture is warm put on cooked noodles.
