Easy Chicken Cordon Bleu: Magic Mix Food Storage Recipe

I found this recipe from one of my favorite people in my ward cookbook. Don’t you just love ward cookbooks?! They are so condensed with wonderful tried and true recipes. I, personally, love Chicken Cordon Bleu (calories aside…so sorry if this is tempting your New Year’s diet but I just couldn’t resist) but it can be really time consuming and intimidating to make! So you can guess how happy I was to make this in no time at all and have it taste just the same! Plus, you can make exactly 1 1/2 cans of Condensed chicken soup from magic mix, with out any waste while using your food storage, so easy!  I even made this for some friends and they couldn’t stop raving about how wonderful it tasted.

ward cookbookEasy Chicken Cordon Bleu

8 boneless chicken breasts
8 thin slices of ham
8 thin slices Swiss cheese
1 1/2 cans cream of chicken soup (1 1/2 C. Magic Mix, 1 1/8 C. Chicken Broth (either from a can, bouillion, or liquid from canned chicken), 1 1/2 t. Dry Parsley, Dash of Onion Salt-Bring together over high heat, stirring constantly until thick)
1/2 c. water
1 box Stove Top for Chicken Stuffing

Layer chicken, cheese, and ham in a baking dish. Mix soup with water and pour over chicken. Melt 1 cube of butter in saucepan. Add stove top stuffing with seasoning. Sprinkle over top. Bake covered at 350 for 45 minutes. Uncover and bake 15 minutes longer.

My Ode to Pizza: Taco Pizza-Food Storage Recipes

Okay, so you’d think I eat at Papa Murphy’s a lot more by how many pizzas I try to recreate of theirs….but then again maybe I don’t eat there as much because I make my own. ;)  However it works…I’m sharing it with you and that is the important part!  This pizza combines my two FAVORITE things, Mexican food and Pizza.  It may be against some sort of ethnic cooking policy to combine Italian with Mexican, but who cares!  It’s DELICIOUS! (and if you’re wondering, of course I put jalapenos on mine!)

Taco Pizza

Pizza Crust
Dehydrated Refried Beans (Hydrate them in 3/4 the amount of water called for, that is a little trick of mine.  It’s always easier to add a little more water in at the end then it is to add in more beans)
Cheddar Cheese
Taco Meat
Avocado
Tomatoes
Olives
Jalapenos
Green Onions
Canned Corn
…and any other favorite Taco toppings

The idea is to use the refried beans as the “sauce” then add any meat, cheese and any other toppings you like on your tacos and bake.  I like to serve sour cream and salsa as dipping sauces. So easy and SO DELICIOUS.  You’ve got to try it!

Too much Zucchini?-More Food Storage Recipes

I realized today that most people probably aren’t still waiting for their zucchini plants to really get going like I am, so I’ll stop procrastinating this post! Zucchini is really great the first couple times you eat it but can get old when your plant is giving you 3-4 a DAY! Here are three great recipes that you can use with your zucchini but you can also shred the zucchini and freeze it for up to 6 months and use it in recipes during the winter or you can de-hydrate it (assuming you have a dehydrator). Dehydrating is a great way to store those summer vegetables you have too much of. (Sun dried tomatoes are DELICIOUS!…a post on that to come later…assuming my tomato plants start going ;)
