<p><strong>Ingredients:</strong><br />
2 c. brown sugar, packed<br />
1 c. oil<br />
3 eggs (3 T. Dehydrated Eggs + 1/3 c. water…if you want a really fun trick use your left over carrot or raisin water to add to the egg powder.)<br />
2 c. carrots, finely grated (1c. dehydrated carrots. Pulse in blender before re-hydrating to make them smaller pieces. They take 20 minutes in cold water to rehydrate so if you need them sooner, simply put them in warmer water.)<br />
1 c. crushed pineapple, drained (If you have orange juice you&#8217;ll be serving, drain the pineapple juice into your orange juice for a fun topical blend orange juice.)<br />
3 c. whole wheat flour<br />
1 t. salt<br />
1 T. soda<br />
1 t. cinnamon<br />
2 t. vanilla<br />
1 c. raisins<br />
1 c. walnuts, broken</p>
<p><strong>Method:</strong></p>
<p>Preheat oven to 350.  Grease and flour 2 bread pans, 1 Bundt pan, or 2 muffin pans (12 each) with vegetable cooking spray. Beat together brown sugar, oil and eggs (no need to reconstitute eggs before adding to this mix). Stir in carrots and pineapple. Blend together dry ingredients; stir into batter thoroughly. Add vanilla, raisins, and nuts. Pour into prepared pan. Bake bread pans for 40-45 minutes, muffins for 20 minutes, and Bundt pan 1 hour or until done.<br />
Makes 1 Bundt pan, 2 bread pans, or 24 muffins.</p>
<p>Adding the nuts on top of the muffins not only gives it a great look and flavor (it lightly toasts the nuts) but it is also a great way to serve nut lovers and non-nut lovers alike since it becomes obvious which have nuts and which don&#8217;t.</p>

<p>Don&#8217;t get me wrong.  I literally LOVE broccoli and cauliflower (and I realize that by admitting that some of you may be questioning my taste in food).  However, my husband, like a lot of people, doesn&#8217;t like broccoli or cauliflower either (and was also disappointed when I craved raw broccoli with our first baby instead of ice cream or cookies) and so every once in awhile I will make him that classic cheese sauce to put on his vegetables.  I love it because it is SO easy to do with <a href="http://everydayfoodstorage.net/2008/05/21/the-magic-of-magic-mix-recipes-perfect-for-kids/food-storage-recipes" target="_blank">Magic Mix since </a> since it&#8217;s basically a white sauce with cheese!</p>
<p><a href="http://everydayfoodstorage.net/products/conversion-chart-magnets"><img class="alignright size-full wp-image-4454" title="conversion magnets" src="http://everydayfoodstorage.net/wp-content/uploads/2010/01/conversion-magnets.jpg" alt="conversion magnets" width="200" height="275" /></a><strong>Vegetable Cheese Sauce</strong><br />
(makes about 1 cup)</p>
<p>1 C. water<br />
1/2 C. <a href="http://everydayfoodstorage.net/2008/05/21/the-magic-of-magic-mix-recipes-perfect-for-kids/food-storage-recipes" target="_blank">magic mix</a> (this is less than you would use for a thick sauce, because I like mine thinner-if you like yours thicker than use the full 2/3 C. <a href="http://everydayfoodstorage.net/2008/05/21/the-magic-of-magic-mix-recipes-perfect-for-kids/food-storage-recipes" target="_blank">magic mix</a> like it calls for in the original &#8220;<a href="http://everydayfoodstorage.net/2009/10/13/fall-harvest-alfredo/food-storage-recipes" target="_blank">Magic Mix White Sauce</a>&#8221; recipe)<br />
1/4 C. cheddar cheese, shredded</p>
<p>Combine water and <a href="http://everydayfoodstorage.net/2008/05/21/the-magic-of-magic-mix-recipes-perfect-for-kids/food-storage-recipes" target="_blank">magic mix</a> in a pot over medium high heat.  Stir constantly with whisk until it bubbles and thickens.  (If you&#8217;re worried at this point that the sauce is too runny, don&#8217;t make a final judgement until the cheese is added as that will also thicken the sauce.) Stir in shredded cheese until melted in sauce.  Serve warm over vegetables.  Store leftovers in the fridge for up to a week.  Perfect for kids or husbands! <img src='http://everydayfoodstorage.net/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /><br />

<p><strong>Pumpkin Bread Bowls</strong><br />
Mirien C.<br />
Makes 4 medium bread bowls—I double this recipe for our family<br />
Ingredients<br />
2 T. instant yeast<br />
1/4 cup sugar<br />
2 cups warm water<br />
4 teaspoons salt<br />
1/4 cup oil<br />
6 1/2 cups whole wheat flour (I use white wheat)<br />
Yellow, red, and green food coloring</p>
<p><strong>Instructions:</strong><em> It seems like a lot of steps, but these are really pretty easy.  They can be made the day before you use them.  I use my Bosch mixer, knead for 10 minutes, and skip the first rise in #3.  But for those who don’t have bread mixers, follow the steps below.</em><br />
1. In a large bowl, dissolve the yeast and sugar in the warm water. Add the salt, oil, and flour and combine.<br />
2. Knead the dough on a floured tabletop, adding more flour if needed, until it is smooth and elastic but not sticky or soft.<br />
3. Place the dough in a lightly greased bowl, turn it over once, then cover with plastic wrap. Let the dough rise just until it has doubled in bulk (about 1 to 1 1/2 hours).<br />
4. Punch down the dough. Divide the dough into four portions, and remove a small piece of dough from each portion for the stems.<br />
5. Shape each pumpkin by grasping the dough from the bottom, stretching it upward, and gathering it on the top. Repeat this process until you have a uniform ball. Then firmly pinch together the gathered dough in the center and turn over the ball. Now gently squeeze the middle of the pumpkin to make it stand as tall as possible.<br />
6. Place the pumpkin on a parchment-paper-lined sheet pan. Grease one end of a toothpick and insert it into the dough stem so that it protrudes an inch from the top. Stick the other end into the pumpkin top. Then cover each pumpkin with plastic wrap and let it rise to twice its size.<br />
7. Uncover the risen dough. Holding the stem, slowly twist the toothpick to loosen it but don&#8217;t remove it.<br />
8. In a small bowl, mix 2 tablespoons of water with 30 drops of yellow and 6 drops of red food coloring. Transfer a half teaspoon of the mixture to a small saucer and stir in a drop of green food coloring.<br />
Use a small pastry brush to paint the stem green (the brush should not be too wet). Gently apply a coat of orange to the globe using a larger brush and long, soft strokes. Let the paint dry for about 2 minutes.<br />
With a sharp knife, lightly score the dough to create the pumpkin&#8217;s vertical grooves (adults only).<br />
9. Heat the oven to 375 degrees and bake the bread until it sounds hollow when you tap the crust, about 35 to 40 minutes.<br />
10. Set the pumpkin on a cooling rack and twist the toothpick to remove it. If the crust seems soft, cool the bread completely, then bake it for another 5 to 10 minutes.<br />
Before serving, slice off the top of the pumpkin and pull out the bread from the inside, leaving the bowl about 1” thick on the sides and bottom.  Fill with thick soup.</p>
<p><em>Note:  I’ve tried coloring the dough orange with food coloring before baking, but I’ve found that painting it on before baking looks much better.</em></p>
<p><strong>Witches’ Brew (Split Pea and Barley Soup)</strong><br />

My kids love this soup—maybe because we’ve always called it witches’ brew.  It’s warm and filling—perfect food to eat before trick or treating.  It’s so easy, too.  Just put everything in the crockpot and forget about it until it’s time to eat.</p>
<p>INGREDIENTS<br />
1 onion, chopped<br />
1 bay leaf<br />
6 cloves garlic, minced<br />
2 cups dried split peas<br />
1/2 cup barley<br />
1 1/2 teaspoons salt<br />
9 cups water or chicken broth<br />
3 carrots, chopped<br />
3 stalks celery, chopped<br />
3 potatoes, diced (I don’t peel them!)<br />
1/2 cup chopped fresh parsley or 2 T. dried<br />
1 teaspoon dried basil<br />
1 teaspoon dried thyme<br />
1/2 teaspoon ground black pepper</p>
<p><strong>DIRECTIONS</strong><br />
Place all ingredients in a large slow cooker and stir until well combined.  Cook for 3-4 hours on high or 6-8 hours on low.  Add more water if soup is too thick.  Serve in bread bowls.</p>

It was so fun and UNIQUE!!  I&#8217;ve even included a video to show you just how EASY it is to make a white sauce out of your magic mix!</p>
<p><strong><em><span style="color: #cc0000;">Fall Harvest Alfredo</span></em></strong>-serves 4</p>
<p>2/3 C. <a href="http://everydayfoodstorage.net/2008/05/21/the-magic-of-magic-mix-recipes-perfect-for-kids/food-storage-recipes" target="_blank">Magic Mix</a><br />
1 C. Water<br />
1/4 C. Shredded Parmesan Cheese (If you use canned parmesan cheese it will be thicker)<br />
1/2 C. Cooked and Pureed Pumpkin<br />
1/2 t. Cinnamon<br />
Dash of Nutmeg<br />
1/4 C. Sour Cream or Cream Cheese<br />
1 C. chopped Chicken<br />
4 C. favorite pasta<br />
Chopped Apple (to garnish, 1/2 an apple per person)</p>
<p>Instructions</p>
<p>1. Get you noodles boiling and chicken cooking.</p>
<p>2. Make a white sauce from magic mix by combine magic mix and water in sauce pan over medium high heat, stirring constantly until it boils and thickens. Once the sauce is thickened, turn heat to low and add parmesan cheese, pumpkin, spices, and sour cream.</p>
<p>3. Combine noodles, chicken, and sauce and serve immediately.</p>
<p>4. Garnish with chopped apples.</p>

<div>I discovered this recipe last fall off of kraftfoods.com, modified it for food storage and fell in love with it! It&#8217;s easy with virtually no mess (just dump everything in the bowl and stir). I&#8217;ve served it at family functions and given it as gifts to friends and everyone L-O-V-E-S it!! My favorite way to eat it is to spread cream cheese on it for an easy breakfast on the go. You&#8217;ve got to give it a try!</div>

<div><strong><em><span style="color: #cc0000;">Whole Wheat Pumpkin Bread<br />
</span></em></strong></div>

1 cup canned pumpkin<br />
1 cup white sugar<br />
1/2 cup firmly packed brown sugar<br />
3 egg whites (or 2 T. dryPowdered Egg + 1/4 C. Water)<br />
1/2 cup fat-free milk (1-1/2 T. Dry Powdered Milk + 1/2 C. Water)<br />
1/4 cup canola oil (1/4 cup white or pinto bean puree)<br />
2 cups whole wheat flour<br />
2-1/2 tsp. Baking Powder<br />
2 tsp. pumpkin pie spice<br />
1/4 tsp. salt</div>

<p>PREHEAT oven to 350ºF. Grease a nonstick 9&#215;5-inch loaf pan; set aside. Mix pumpkin, 1 cup granulated sugar, the brown sugar, 3 of the egg whites, milk and oil in large bowl. Add flour, baking powder, pie spice and salt; stir just until moistened. </p>
<p>SPOON the pumpkin batter into prepared pan.</p>
<p>BAKE 1 hour to 1 hour 5 min. or until wooden toothpick inserted in center comes out clean. Run knife or thin spatula around edges of pan to loosen bread; cool in pan on wire rack 10 min. Remove bread from pan to wire rack; cool completely.</p></div>

<p>I got this recipe from a gal in my ward who is a FABULOUS cook.  One of those ladies you know if it has their name on it that it will be delicious.  Well she made this last year for a &#8220;Recipe Swap&#8221; and I&#8217;ve been waiting for a YEAR to share this with you.   When I made it this year, I realized&#8230;hey&#8230;.I could use beans in this AND whole wheat flour (not to mention powdered eggs!).  And it was DELICIOUS.  It turns it into some sort of food storage super dessert!  The original recipe calls for cream cheese frosting but I topped it with a whipped topping with cinnamon and 1 t. vanilla.  Yummmm&#8230;..the most delicious whipped topping you&#8217;ll EVER eat!</p>
<p><strong>Harvest Pumpkin Brownies</strong><br />
1 (16 oz.) can pumpkin<br />
4 eggs (1/4 C. dry egg powder + 1/2 C. water)<br />
3/4 C. vegetable oil (or 3/4 C. white bean puree)<br />
2 t. vanilla<br />
2 C. whole wheat flour<br />
2 C. sugar<br />
1 T. pumpkin pie spice<br />
2 t. ground cinnamon<br />
2 t. baking powder<br />
1/2 t. salt</p>
<p>Mix wet ingredients (including the water needed for your powdered eggs but not the dry egg powder&#8230;remember you DON&#8217;T need to mix these before adding to your recipes)  Mix dry ingredients with wet ingredients.  Pour into 9&#215;13 pan and bake at 350 for 25-30 minutes.  Allow to cool and frost with cream cheese frosting or dollup cinnamon whipped topping.</p>

<p>Okay, so you may or may not know this about my family but we LOVE pizza.  I don&#8217;t know if I should admit this or not but we eat it probably once a week&#8230;.which before I made our own pizza was expensive (very, very expensive&#8230;even with coupons).  When I first started making pizzas I stuck with the originals (Hawaiian, Mushroom &amp; Olive, etc.) but as I&#8217;ve branched out, I&#8217;ve discovered some really fun things you can do with pizza&#8230;.and food storage!  Now, obviously if you&#8217;re making your own pizza crust you&#8217;re using your food storage, and why not try it with whole wheat?!  I noticed over the summer that Papa John&#8217;s is now marketing a whole wheat pizza (which of course costs more).  So if Papa John&#8217;s sells it&#8230;there is no reason why you can&#8217;t make it!  Personally for a pizza crust, I either do the <a href="http://everydayfoodstorage.net/2008/09/21/2-for-1-breadsticks-or-pizza-in-under-30-minutes-from-one-easy-recipe/food-storage-recipes" target="_blank">30 Minute Pizza Crust</a>, or the <a href="http://everydayfoodstorage.net/2009/03/11/making-homemade-bread-the-food-storage-recipe-challenge/food-storage-recipes" target="_blank">EZ Bread Dough Recipe</a>.  But enough about the crust..that is the boring part&#8230;let&#8217;s talk toppings (other than pepperoni).  Papa Murphy&#8217;s has this pizza that I LOVE.  It has this white garlic sauce, mozerella cheese, fresh vegetables and chicken.  I had always wondered what that oh so delicious secret sauce was&#8230;until it dawned on me&#8230;it&#8217;s a WHITE SAUCE with GARLIC.  Well&#8230;good grief&#8230;I know how to make a <a href="http://everydayfoodstorage.net/2008/10/14/fall-harvest-alfredo/food-storage-recipes" target="_blank">white sauce</a> (and pretty easily I might add), thanks to <a href="http://everydayfoodstorage.net/2008/05/21/the-magic-of-magic-mix-recipes-perfect-for-kids/food-storage-recipes" target="_blank">magic mix</a>.  So yes, I was very pleased with myself when I could make that Papa Murphy&#8217;s pizza, just how I liked it, at a fraction of the cost&#8230;and so can you!  Here&#8217;s how&#8230;</p>
<p><strong><span style="text-decoration: underline;">Garden Vegetable Garlic Pizza</span></strong></p>
<p>1 Pizza Crust<br />
1 Grilled Chicken Breast (optional)<br />
Fresh Vegetables (which ever your family likes, if you choose to do broccoli like I do, you&#8217;ll need to slightly cook the broccoli before adding it to your pizza or it will be too crunchy)<br />
Mozarella Cheese <br />
1 C. Garlic White Sauce (2/3 C. magic mix, 1 C. water, and 2 T. fresh, minced garlic-garlic should be done to taste, mix over medium high heat until it thickens)<br />
Asiago Cheese (optional) I just like to put a little on top</p>
<p>Place garlic white sauce on top of crust, then cheese, then toppings and bake.</p>

<p>Alright, I think most people call this salad Taco Salad but growing up we called it Hachacha Salad&#8230;which I love because a) it&#8217;s really fun to say and b) it&#8217;s sounds better than plain old taco salad.  The theory is the same though and I love to serve this for guests in the Summer time because they build their own (and I hate it when people don&#8217;t like what I made or pick around my food) and you can use a lot of items from your 3 month supply as well as your garden.  Here are some ideas of what you can put on your salad&#8230;.</p>
<p>Hachacha Salad</p>
<ul>
<li>lettuce</li>
<li>chili (or any kind of beans but I like it spicy)</li>
<li>tomatoes</li>
<li>avocados</li>
<li>olives</li>
<li>green onions</li>
<li>cheese</li>
<li>jalapenos (I love any good excuse to put jalapenos in my food <img src='http://everydayfoodstorage.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </li>
<li>sour cream</li>
<li>salsa</li>
<li>corn</li>
<li>fritos or tortilla chips</li>
<li>Ranch dressing (I think this is optional but some people don&#8217;t think it&#8217;s a salad without an official salad dressing</li>
<li>name your own topping!  Anything you would put on tacos would taste great on this salad. </li>
</ul>
<div>Let everyone put theirs together and you won&#8217;t hear any whining about the salad!  Have fun and enjoy your cool kitchen&#8230;you won&#8217;t have to use your oven or stove top for any of this!</div>

			<content:encoded><![CDATA[<!-- Start Shareaholic LikeButtonSetTop Automatic --><!-- End Shareaholic LikeButtonSetTop Automatic --><p>I realized today that most people probably aren&#8217;t still waiting for their zucchini plants to really get going like I am, so I&#8217;ll stop procrastinating this post!  Zucchini is really great the first couple times you eat it but can get old when your plant is giving you 3-4 a DAY!  Here are three great recipes that you can use with your zucchini but you can also shred the zucchini and freeze it for up to 6 months and use it in recipes during the winter or you can de-hydrate it (assuming you have a dehydrator).  Dehydrating is a great way to store those summer vegetables you have too much of.  (Sun dried tomatoes are DELICIOUS!&#8230;a post on that to come later&#8230;assuming my tomato plants start going <img src='http://everydayfoodstorage.net/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /><br />

<p><strong>MCP Pectin Freezer Jam</strong></p>
<p>3-1/4 cups prepared fruit (buy about 2 qt. fully ripe strawberries)<br />
1/4 cup  fresh lemon juice<br />
1 box <a target="_blank" href="http://www.amazon.com/gp/product/B001EQ4DQQ?ie=UTF8&amp;tag=everfoodstor-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B001EQ4DQQ" target="_blank">MCP Pectin</a><br />
1 cup  corn syrup<br />
4-1/2 cups sugar, measured into separate bowl</p>
<p>Directions:</p>
<p>RINSE clean plastic containers and lids with boiling water. Dry thoroughly.</p>
<p>CRUSH strawberries thoroughly, one layer at a time. Measure exactly 3-1/4 cups crushed strawberries into large bowl. Stir in lemon juice. Stir in pectin; let stand 30 min., stirring every 5 min. Stir in corn syrup. Gradually add sugar, stirring until well blended. Stir an additional 3 min. or until sugar is completely dissolved and no longer grainy. (A few sugar crystals may remain.)</p>
<p>FILL all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.</p>
